Cooking with Lemon Fresh

Dressings
Indonesian lime juice salad dressing:
2 tablespoons of lime juice
2 tablespoons of sugar
2 tablespoons of olive oil
1 garlic clove
Salt and pepper
Mix well until the sugar is dissolved and pour over salad!

Seafood
Ceviche:
300g of any firm white fish
100ml of lemon juice
50ml of lime juice
Chopped cucumber
1 small red onion
4 large tomatoes
Handful of coriander
1 red chilli
Combine all the ingredients and marinate in the fridge for about an hour. Serve with lavash, corn chips or with a crisp green salad.

500g mascarpone
100g icing sugar
½ teaspoon of vanilla extract
100ml of lemon juice
Combine all the ingredients well and chill well before serving.
